I went to the Congress Cup Cafe today and had the most delicious brunch. So delicious in fact that I felt
the need to recreate it. 

Poached eggs slightly baked, leeks and ham in gruyere cheese with cream and herbs topped with some scallions. Tasted just as good when I made it!
